How we elevated regional flavors and cultural heritage into immersive tasting experiences



Mambo Sauce & Sweet & Spicy Jam Sauce Activation Events | Fall 2023 | New York & Chicago

OBJECTIVE

McDonald’s introduced two limited-time dipping sauces, Mambo Sauce and Sweet & Spicy Jam Sauce, to U.S. menus starting October 9, 2023. These launches were designed to expand flavor options while celebrating cultural food traditions and regional culinary influences. The campaign positioned McDonald’s as a brand willing to embrace bold tastes, community roots, and culinary heritage.

Sauce Profiles and Cultural Roots:

Mambo Sauce:
Inspired by the iconic Washington, D.C. and Chicago regional condiment, Mambo Sauce is a tomato-based sweet, spicy, and vinegary sauce deeply rooted in Black food culture. Historically a favorite at takeout and wing shops, McDonald’s brought it to a national audience. The launch was paired with a documentary short, The Love of Mambo, celebrating Black chefs, restaurateurs, small business owners, and community voices who have kept the sauce’s tradition alive.

Sweet & Spicy Jam Sauce:
McDonald’s first breakfast-inspired dipping sauce in the U.S., featuring a jammy red pepper base with Szechuan peppercorn and cayenne heat. Recommended for breakfast sandwiches, hash browns, and chicken items, the sauce exemplified flavor innovation with cultural relevance. Both sauces extended McDonald’s menu innovation beyond novelty into culturally resonant culinary experiences.

EXECUTION

NYC Mambo and Jam Tasting Event:
A localized experiential activation brought the sauces to life in New York City. Guests sampled the sauces paired with signature items including McNuggets, World Famous Fries, breakfast sandwiches, and McCrispy products. The tasting experience was elevated through urban, pop-culture-inspired design elements, featured in local food and lifestyle calendars, and positioned as a must-try culinary moment.

Cultural and Influencer Amplification:
McDonald’s collaborated with a roster of food and cultural content creators, including @Mr.Eats305, @sharidyonne, @santanakeish, @misslegarda, @natelovlogs, and @blackgirlsexploredc. Creators captured dips, drizzles, and recipe ideas, generating organic social content across TikTok and Instagram. Their authentic reactions and creative pairings amplified reach, engagement, and cultural storytelling.

Chicago Sweet and Spicy Jam Launch:
In Chicago, Mambo Sauce held extra significance due to the city’s regional mambo/mumbo sauce heritage. The activation honored local culinary traditions, featured tastings, community dialogues, and tributes to historic sauce makers highlighted in The Love of Mambo documentary. Local journalists and food outlets emphasized McDonald’s respect for regional food culture, positioning the launch as both innovative and authentic.

Sampling Insights:
The Sweet & Spicy Jam was sampled across markets to showcase flavor versatility and pairing potential, particularly with breakfast and lunch menu items. These activations created interactive trial moments that drove menu engagement.
